How is Wagyu Beef Graded? Officials strictly grade Japanese Wagyu Beef for its yield, quality, appearance and flavor. The highest scores are A4, A5 and A5+, and they’re equivalent or superior to the American USDA Prime. For those most interested in a steak’s marbling, Japan also classifies the meat with a Beef Marbling Score (BMS); any score between 8 and 12 is of the most excellent quality
